Visiting the Smokehouse at Sonny Bryan's in Dallas, Texas
When they heard I was from Chicago, the barbecue experts at Sonny Bryan's Smokehouse in Dallas insisted I come around the back and watch them roast a pig in their famous woodsmoke ovens. "You can't really appreciate good Texas barbecue until you do," they assured me. They were right. Since 1958, the small wooden shack on Inwood Drive (the original location of this Texas institution) has been filled with the fragrant smoke of mouth-watering barbecue. Heaping a plate full of brisket, baked beans and coleslaw, I settled into one of the wooden vintage school desks that make up the only seating in this tiny restaurant and ate greedily while a picture of Sonny Bryan himself smiled down on me, approving.
