Savoring Mole Poblano Where It Began in Puebla, Mexico

Puebla is a treasure trove of delectable local specialties, the most decadent being mole poblano. A thick, rich sauce infused with as many as one hundred ingredients, including chocolate, cinnamon, nuts, and a host of chili peppers, mole poblano is usually served over poultry, and can take days to perfect. When in Puebla, the best sampling of the dish can be found in a quirky, 17th-century hotel called Mesón Sacristía de la Compañía. In a colorful dining room, chock-full of antiques for sale, you will indulge your tastebuds and partake in a meal you won’t soon forget. (Travel tip: If you’re ambitious, ask for the mole tasting plate—a hungry man’s heaven!)
