Slurping Up Hot Chocolate and Melted Cheese in Bogotá, Colombia

Hot chocolate is a popular drink in many Latin American countries, but it’s practically a national pastime in Colombia. Chocolate Santafereño is Colombian hot chocolate served rich and steamy, with cubes of salty melted queso blanco cheese. Prepared on foggy, brisk mornings or for after-dinner treats, the perfectly balanced mix of salty and sweet is a Colombian staple. Visit Bogotá’s nearly 200-year old restaurant, La Puerta Falsa, for a true taste of this special concoction. After the abuelitas (Little Grandmothers) whip up the hot chocolate with a specially constructed wooden spoon called a molinillo, they drop the cheese in and while the hot chocolate cools, the cheese will melt into a perfectly slurpable consistency. ¡Buen provecho!
