Competitive barbecue chef Neil “Bigmista” Strawder got his whole family on board when he decided to trade in his pocket protector for an apron and embrace full-time his love of slow-cooked meats. The Long Beach-based catering business hauls its smoker to several regional farmers markets, serving up "MOINK balls"—marinated ground beef wrapped in strips of bacon and dipped in blueberry chipotle sauce—and the original "pig candy," thick cuts of bacon seasoned with brown sugar and cayenne pepper. Bigmista’s own description of the pulled pork says it best: “succulent goodness.”
