Rediscovering China in Burlington, Vermont

Central Vermont might be the last place you would expect to experience a Chinese banquet, but the varied and subtle flavors on the menu at A Single Pebble are inspired by palatial dishes from half-way around the world. Spin the lazy susan on the table to steal chopstick pinches of your friends' dishes, full of savory bean curd and Szechuan sauce. Order the evocatively named Chop Your Head Off soup, the Ants Climbing a Tree noodles, or Mock Eel—a braised shitake mushroom dish with a legion of loyal followers. Vegetarians will be delighted by the variety on a menu that liberates them from the doldrums of rice and noodles. Try the battered fried walnuts and you'll swear off veggie fried rice forever.
